Green Tea and Vanilla Muffins

Ingredients:
- 2-3 green tea bags
- 1 cup milk (or non-dairy alternative)
- 2 cups all-purpose flour (or gluten-free blend)
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup granulated sugar (or honey for a natural option)
- ⅓ cup vegetable oil (or melted butter)
- 1 large egg (or flax egg for vegan option)
- 1 tsp vanilla paste
- Optional: zest of 1 lemon or ½ cup white chocolate chips
Instructions:
Step 1: Infuse the milk with green tea:
- Heat the milk in a small saucepan over medium heat until it’s warm but not boiling.
- Remove from heat and add the green tea bags. Let steep for 5-7 minutes. Remove the tea bags, squeezing out any excess liquid, and let the milk cool to room temperature.
Step 2: Preheat the oven and prepare the pan:
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or lightly grease the cups.
Step 3: Mix the dry ingredients:
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
Step 4: Prepare the wet ingredients:
- In a separate bowl, whisk together the infused milk, sugar (or honey), oil, egg, and vanilla paste until well combined.
Step 5: Combine wet and dry ingredients:
- Gradually add the wet ingredients to the dry ingredients. Mix gently until just combined. Be careful not to overmix, as this can make the muffins dense.
- If you're adding lemon zest or white chocolate chips, fold them in now.
