Ingredients:

  • 2-3 green tea bags
  • 1 cup milk (or non-dairy alternative)
  • 2 cups all-purpose flour (or gluten-free blend)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup granulated sugar (or honey for a natural option)
  • ⅓ cup vegetable oil (or melted butter)
  • 1 large egg (or flax egg for vegan option)
  • 1 tsp vanilla paste
  • Optional: zest of 1 lemon or ½ cup white chocolate chips

Instructions:

Step 1: Infuse the milk with green tea:

  • Heat the milk in a small saucepan over medium heat until it’s warm but not boiling.
  • Remove from heat and add the green tea bags. Let steep for 5-7 minutes. Remove the tea bags, squeezing out any excess liquid, and let the milk cool to room temperature.

Step 2: Preheat the oven and prepare the pan:

  • Preheat your oven to 375°F (190°C).
  • Line a muffin tin with paper liners or lightly grease the cups.

Step 3: Mix the dry ingredients:

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 4: Prepare the wet ingredients:

  • In a separate bowl, whisk together the infused milk, sugar (or honey), oil, egg, and vanilla paste until well combined.

Step 5: Combine wet and dry ingredients:

  • Gradually add the wet ingredients to the dry ingredients. Mix gently until just combined. Be careful not to overmix, as this can make the muffins dense.
  • If you're adding lemon zest or white chocolate chips, fold them in now.

Step 6: Fill the muffin cups:

  • Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

Step 7: Bake:

  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8: Cool and enjoy:

  • Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
